Keto Wednesday--- Cheesy Bacon Broccoli


Bacon Broccoli


Prep time: 10 minutes
Cooking time: 25 minutes

One of my favorite side dishes is my Keto Cheesy Bacon Broccoli. I love broccoli and I LOVE Bacon! So this dish is the best of both worlds! I like to make it in bulk so I can have it all week with my lunches. It's super easy to make and it goes with everything so it's a win-win!

Ok... Here's what you need to make it: 

- Broccoli (like a big Costco size bag)
- Bacon- about 5 pieces 
- Heavy cream
- Parmesan cheese
- salt 
- dutch oven or a big pot




Step 1- Cut the bacon into small bite size pieces. Place into dutch oven and turn onto medium heat. 




Step 2- While bacon is cooking, start to trim the broccoli. I don't like long stems on my broccoli. 



Step 3- Once bacon is just about fully cooked, pour broccoli into put and put the lid on. Don't drain the grease! That gives the the broccoli the flavor. I wait about 5 minutes before I stir it for the 1st time. After stirring, put the lid back on. I wait about another 4-6 minutes before stirring again. 


Step 4- Pour a small pour of heavy cream into the pot and put the lid back on. Add a little salt and stir. Once the broccoli is slightly tender, turn off the stove and sprinkle for parmesan cheese in the top. Place the lid back on for about 3-5 minutes.  


And Volia! You have a yummy keto side dish!

Target Drive Up! My new FAVORITE!!



I love Target... if you know me, you should know that much. I would consider myself a basic bitch who can be found at Target in my yoga pant (that have never been to a yoga class) with a Starbucks in my hand! 







I then got on my phone, onto the app and logged in and it knew that I was there. It said that they would be out there within two minutes and no joke she was out there in a minute. One minute!!! This was great since I didn’t have to take all three of my kids into target. And I didn’t overspend. Win for me! I only ordered two things, so I’m sure that’s why it only took 12 minutes for my order to be ready, but it was so worth it. I am always tempted to grab a Starbucks once I enter Target and this helps my Starbucks habit by not having to go in. I will be using this so much more! Thanks again Target

Hi! It's me again!


I know…. I know…. it’s been forever since I posted here. But being a wife to a Police Officer who works in one of California’s most dangerous cities, mom with 3 kids who works and tries to keep the house decent while making semi-healthy dinner is NO JOKE! But I am trying to give myself more time to me and do what I love…. crafting and being creative.

Let’s update everyone on our family:

             
Kellan- 9 years old (I know!) – He is all about the Lego Life.  This kid loves anything Military! He has already planned going into the military after High School.


Arley- 6 years old – She is Miss Sass! This girl is having an amazing time in Kindergarten. She loves to dress up and put on make-up, ride her bike and use as much glitter as she can on everything! 
       
Mason- Almost 2 (EEK!) – Mason is a little tornado, running around the house and getting into EVERYTHING, but giving hugs and kissed along the way. Mason will turn 2 on June 30th and he has completed out family! The 2 big kids just LOVE having a little brother!

Just a Costco run...

After picking Kellan up from Preschool, we had to make a Costco run. Almost like any other Costco run, but this time it was just Kellan and I. Ever since Arley was born, Kellan and I don't get a lot of us time. I miss it.... just us. I love all the time spent with Arley too. It's just nice to spend one on one time with each kid. So... back to our Costco run- Kellan was such a good boy at Costco today. We went down all the aisles, looked at the toys and even got some samples. Usually with  kids, a Costco run get a little crazy. But this trip was sooooo easy! He was just a perfect  boy the whole time. We even got some lunch and ate at there too! We never get to do that. It made Kellan so happy to sit and eat our pizza and smoothies together. Just us. I look forward to sharing these easy moments with Arley too. Sometimes, all you need is a good Costco run to bring you back together! Love you Kellan!

Opening day for Baseball! Go White Sox!

While my lucky husband got to go off on a vacation with the boys, I was running wild this weekend too.... but nothing to exciting! On Friday we went to see the Oscar Meyer Weinermobile! I saw a post on Facebook right before I had to pick up Kellan from preschool, so I decided we NEEDED to see it! The kids were kind of confused at first why we were checking out a giant hotdog. But they finally got into it! They even got weenie whistles and stickers!



On Saturday, we had Opening Day for Baseball and Kellan's 1st baseball game. Opening day was fun to see all of the different teams on one field. Kellan is on the White Sox 5-6 year old Machine pitch team. He loves his team! We even got to see when A&W Bear!!


Kellan did great in his first game! He was so excited and pumped to finally be playing in a real game. He hit the ball on his very first swing the first time at bat! I think he was surprised that he hit it too! SO proud of my little baseball player!


I love watching Kellan play baseball! I'm pretty sure i'm going to love being a baseball mom! Arley did pretty well all day too. It was a super long day for her, but she was a trooper. My mom was there, so that was a big help. I can't wait for Rob to watch Kellan play! GO WHITE SOX!

I'm back!


I know, I know.... its been a while! Life has been crazy over here at the Barrington house. So much has happened within the last 6 months. We have bought a house! We did it! It took a lot of work, but its all ours and we love it! We closed in October and moved in December...like 5 days before Christmas. If you know us, everything we do comes at crazy times. Between working a ton of hours and moving in, I was determined to have a full Christmas in our new home. I'm still surprised that I got everything together. 


Arley has turned 2! Where has the time gone. She is such a big girl now. She can count up to 15 and has been singing ABC's for a few months. It amazing how fast she is learning everything. I love all her questions for me everyday and all her songs she sings. She might make me go crazy sometimes but she lights up my life. 


My big boy Kellan turned 5 in March. I can't believe I have a 5 year old!!! I remember bring him home from the hospital and now I am practicing baseball and playing light sabers and now you will be starting Kindergarten in the Fall. Stay little for as long as you can, you will always be my baby boy. 


And we got a puppy! Callie is a 14 week old German Shepard and Husky mix! We love her and we are so happy to have welcomed her into our family!
