My family loves Pesto. I don't even have to ask them to eat it up. When your kids really like something, you keep it in rotation. So I am always looking for ways to add Pesto into a meal some how. I have searched and searched and I have think I have found a good one to add to our favorites.
After searching Pinterest, I came across a recipe by Farmsteadchic. I looked it over and though my family would really like it but I changed it up some. This is a pretty easy recipe, especially since I used a rotisserie chicken, it was really easy to throw together. I love casseroles since you just mix everything together and bake! Easy Peasy! And as a busy mom, I need easy dinner options!
Are you ready to see how I made it? Well here we go!
Here's what you need:
-Pan Spray - I use coconut spray
-Rotisserie chicken- I use everything that I can get off there
-1 1/2 cups of mayonnaise
- 1 cup of sour cream
- 1 cup of pesto - I use the Costco brand
- 1/2 cups of grated parmesan cheese
- 1 cup of grated mozzarella cheese
- 2 eggs
- ground pepper to taste
Here's how to make it:
1. Preheat the oven to 400 degrees. Gather all your ingredients.
2. Tear off all meat that you can get off of the rotisserie chicken that you can get. Set it aside.
3. Add in the mayonnaise, sour cream and pesto.
4. Mix everything well.
5. Mix in both cheeses into the mix.
6. Add some pepper and mix in.
7. Add in the 2 eggs and mix well.
8. Grab your 9 x 12 glass pan and line it with foil. Spray the inside of the pan with pan spray.
9. Pour in mixture and make sure its even in the pan.
10. Top with some more mozzarella and parmesan cheese.
12. Once the timer is done, change it over to the broiler for about 3 minutes. Check in it every minute to make sure it's not boring.
13. Take out and let sit for a few minutes.
14. Serve with your favorite Pasta and a veggie and you are ready for dinner!
My family loves pesto so much that they choose to have pesto sauce on their pasta too! I made broccoli with the meal.
