Keto Chicken Cheesy Pesto Casserole - Easy & Fast

My family loves Pesto. I don't even have to ask them to eat it up. When your kids really like something, you keep it in rotation. So I am always looking for ways to add Pesto into a meal some how. I have searched and searched and I have think I have found a good one to add to our favorites. 

After searching Pinterest, I came across a recipe by Farmsteadchic. I looked it over and though my family would really like it but I changed it up some. This is a pretty easy recipe, especially since I used a rotisserie chicken, it was really easy to throw together. I love casseroles since you just mix everything together and bake! Easy Peasy! And as a busy mom, I need easy dinner options! 

Are you ready to see how I made it? Well here we go! 

Here's what you need: 

-Pan Spray - I use coconut spray

-Rotisserie chicken- I use everything that I can get off there

-1 1/2 cups of mayonnaise 

- 1 cup of sour cream

- 1 cup of pesto - I use the Costco brand

- 1/2 cups of grated parmesan cheese

- 1 cup of grated mozzarella cheese

- 2 eggs

- ground pepper to taste

Here's how to make it: 

1. Preheat the oven to 400 degrees. Gather all your ingredients. 

2. Tear off all meat that you can get off of the rotisserie chicken that you can get. Set it aside. 

3. Add in the mayonnaise, sour cream and pesto.


4. Mix everything well.

5. Mix in both cheeses into the mix. 

6. Add some pepper and mix in. 


7. Add in the 2 eggs and mix well. 

8. Grab your 9 x 12 glass pan and line it with foil. Spray the inside of the pan with pan spray. 

9. Pour in mixture and make sure its even in the pan. 

10. Top with some more mozzarella and parmesan cheese. 

11. Pop it into the preheated oven for 20-25 minutes.

12. Once the timer is done, change it over to the broiler for about 3 minutes. Check in it every minute to make sure it's not boring. 


13. Take out and let sit for a few minutes.

14. Serve with your favorite Pasta and a veggie and you are ready for dinner! 


My family loves pesto so much that they choose to have pesto sauce on their pasta too! I made broccoli with the meal. 

How easy was that! Way too easy!

My meal plan for the week - 9/7/20 - Plus a Free Printable Meal Planner!

Another week, another grocery order. Before Covid, I used to go to the grocery store 2-3 a week. Some weeks, I would make a plan. Other weeks I would just go to the grocery store and fill my cart. We were so used to spending $250-$300 a week on groceries. Plus any Target runs added to that. But once we bought a more expensive house, I knew that I had to cut costs somewhere. 

Meal planning really not that hard. Just finding the 30 minutes to an hour 1 day a week is all you need to find. I normally do it on Friday night or Saturday morning. I use a planner that I bought at Marshalls to plan everything out. Since I didn't start in the beginning of the year, I have more than enough pages that are unused to make my food list out on. 

Last week I only changed my menu once. I worked a late day and I wasn't in the mood to make beef enchiladas. Plus we had a Mexican dish not to long ago. Luckily, I froze the ground beef to use for another meal. Save what you can! 


 This week we are having for dinner:

Monday: Cheesy Pesto Chicken Casserole w/ Pasta

Tuesday: Sausage w/ noodles and carrots 

Wednesday: Keto Meatloaf w/ mashed potatoes and broccoli 

Thursday: Left Overs

Friday: Kids Pick

Saturday: Green Chicken Chilies Casserole 

Sunday: Spagetti w/ Meatballs 

After making my list, now it's time to see what I need at the store. Some things I stock up on, so I don't always need to buy everything we need. Keeping a good stock of non perishables is so important just incase something happens. I like to be prepared always! 

Here is my grocery list: 

I do a grocery pick up either Saturday or Sunday, whatever is available. The best part about this is that I don't have to get out of the car! I drive up and they bring it out to my car. They confirm with me and then open up the back of my suburban and load it all in there. That's it! 

Once I get home, I just make sure I have everything. I think only once, I was missing something. On the Walmart app, I start a return and they refund me right away. Also, If you don't like the quality of the item, they refund you as well. And if they have to substitute an item, you get charged the amount of the item you pick, unless its cheaper. I do notice that normally if I get a substituted item, the item that they used a better item. That works for me. 

Here is what I ordered this week. 

I only had 1 issue on some cheese. I ordered some sliced sharp cheddar cheese and when I went to go use it, it looked like it had mold on it. Now this cheese was still sealed. I may have been a fluke, but I didn't want to take my chances, so I processed a refund on the cheese. It asked me about the issue and refunded my money right away. 

After I do a grocery pick up, I normally get a survey on how my grocery pick up way. I am completely honest, as this is the time for them to make their great service even better. So once I get the survey, I will inform them of the cheese issue.

My meal plan for the week - 8/31/20 - Plus a Free Printable Meal Planner!

So I haven't started to plan out my meal for the week to try and save us some money and the stress of what I am going to make each night. I have always done my grocery shopping at Safeway and Costco but since the pandemic started, I have started to look at other options. With 3 kids, its been hard to grocery shop. I haven't taken them out to the store so I have been doing a lot of grocery orders, pick ups and deliveries. 

Since starting this, I have saved the stress and a ton of money! I now so most of my grocery pick ups from Walmart. Im pretty good with knowing good prices for groceries and I am amazed at the savings that I have found at Walmart. Plus, Im not walking around and browsing the store, putting items in the cart that we don't need. 

I try to only grocery shop once a week, and when ever I went to Safeway my weekly total was at least $250! Thats a lot of money. Plus if we needed to make a Costco trip, that was even more. I swear you can't get out of there for less than $100. I knew that I needed to change our spending habits. I have been pretty good with our meal planning and prepping, so I wanted to share it with you! 

First steps for me is to figure out what meals we want. I grab a cup of coffee and start planning! Since I'm on Keto and the rest of my family is not, I have to make sure they get carbs. Pasta and rice are an easy carb to add to any meal, so they have a lot of that. 


This week we are having for dinner:

Monday: Garlic Parmesan Chicken with Pasta & Zucchini

Tuesday: Beef Enchilada Casserole with Mexican Rice & Corn

Wednesday: Beef Stew with French Bread

Thursday: Left Overs

Friday: Kids Pick

Saturday: Meatballs with Carrots and Rice

Sunday: Hamburgers with Fries and Corn on the Cob

$131. 95! 

That's it! I don't remember that last time I got this many groceries for that much! Now I some weeks, I grab a tri-tip from Costco or Safeway since my husband can be picky, but I stick to my list of what I need! 

Ive been doing this for about 5 weeks, and if I'm saving between $100-$150, that's a ton of money saved! Plus all these meal are large so I have a lunch to take to work the next day. That is saving me money too. Plus being on Keto, my food choices at work are very limited so during the week, I'm not spending that much money.  Woo hoo! I love saving money! Give me more for craft stuff! Haha... 

To keep me on track, I made a cute printable that I can print up blank or type in. It's great to put on the fridge to remind me of what the dinner plans are.
