Keto Meatloaf - Low Carb and Tastes Yummy!

One Dinner that is constantly in our rotation is Meatloaf. My family has always loved meatloaf - regular or  keto. So I knew that I would have to make it Keto friendly to keep it in our dinner rotation. Most items are the same, just change out breadcrumbs with pork rinds and the Ketchup with sugar free or low sugar ketchup. My family doesn't even know the difference. 

Are you ready to make a great keto dinner?!? Then follow along! I make this large since I am feeding a family of 5 who like to eat! Plus there is some left over for lunch the next day! 

Ingredients 

-3 lbs. Ground Beef
-2 onions
-1 Large Bag of pork rinds
-2 eggs
-2/3 cup tomato paste
-2 tbsp of Italian seasoning
-1/2 tsp garlic powder
-pinch of pepper
-pinch of salt
-Sugar free ketchup

Instructions

1. Preheat oven to 350 degrees. 
2. Let ground beef sit out for a few minutes before starting. Take this time to cut the onions.

3. Once the meat has warmed a bit, place it into the kitchen aid along with the onions. Stir on low and not for long. 

4. Place pork rinds in the blender and blend then up. I normally fit it up, blend it and pour the rest in once there is more room. 

5. Add italian seasonings, eggs, salt and pepper into the kitchen aid. Stir again on low until blended. 


6. Add in pork rinds and blend again just for a little bit. 

7. Add in tomato sauce and blend one last time. Make sure it s fully blended, just make sure not to blend too much. 

8. Grab a 9x12 glass pan and line it with foil. This helps big time with clean up. Spray with Pam. 
9. Pour the meatloaf mixture into the pan and spread it out evenly. I like to pat it into all the corners. 

10. Put it into the oven for an hour. 
11. Sit, wait, watch a show- and after that hour in the oven, take it out and put the sugar free ketchup on the top. I like to drain the excess oil with a baster at this point. 
12. Broil for 3-4 minutes to get that ketchup all gooey and slightly crusty. 
13. Take out and let sit for a few minutes. While you are waiting, drain the rest of the excess oil with the baster again. 


Since my family needs carbs, I make mashed potatoes and broccoli to complete the meal. 

They eat every bite, every time! All of them! Its pretty great when all the kids like a meal. It doesn't happen often, so this is a win in my book!

DIY Pumpkin Door Tag - Perfect for your Fall Decor! Easy and Fun to make!

I know we are almost to Fall, but dang it- can't Fall just get here already! The Falls months are my favorite and I love to decorate the house - inside and out - for Fall. What I love about Fall decorations is that you use fall colors in September, and then October rolls around and you add in your Halloween decorations. Once Halloween is over, Bam- add in your Thanksgiving decorations. I love that you have a base layer of decorations so you are not completely setting up for only one holiday and then tearing it down a month later. You truly get 3 months to keep it up and change it up a bit here and there. I love it! 

Well, why not start off with this great door tag! Easy & Fall festive all in one craft project!!

Want to make this? I'll show you how!

Supplies

**Best part about these supplies is that one you buy them, you can use them over and over with other projects! 

Step 1
Get everything you need into your work area. Open up and stir your chalk pastes so that are ready to go.

Step 2
Fuzz your Pumpkin Patch Transfer with the Fuzzing Cloth. You want to do this so it doesn't get stuck to the door tag. 

Step 3
Lay your transfer down on the Door Tag in the position you want. Once you find your exact placement, push down and make sure it has adhered well. 
Step 4
With your Mini Squeegee, apply the Black Velvet Chalk Paste to the words at the top and at the bottom. If this took you a little while to do, you could use the paste and pull method. 
Step 5
With your Small Squeegee, apply the Orange Peel Chalk Paste to the pumpkin section of the transfer.  
Step 6
Remove the transfer and either place in water bath or clean immediately. Once clean, let dry. Once dry, place the backer back on the sticky side of the transfer.

Viola! You are ready to show off your Fall Decor with a custom made door tag! All your neighbors will be jealous!

Keto Chicken Cheesy Pesto Casserole - Easy & Fast

My family loves Pesto. I don't even have to ask them to eat it up. When your kids really like something, you keep it in rotation. So I am always looking for ways to add Pesto into a meal some how. I have searched and searched and I have think I have found a good one to add to our favorites. 

After searching Pinterest, I came across a recipe by Farmsteadchic. I looked it over and though my family would really like it but I changed it up some. This is a pretty easy recipe, especially since I used a rotisserie chicken, it was really easy to throw together. I love casseroles since you just mix everything together and bake! Easy Peasy! And as a busy mom, I need easy dinner options! 

Are you ready to see how I made it? Well here we go! 

Here's what you need: 

-Pan Spray - I use coconut spray

-Rotisserie chicken- I use everything that I can get off there

-1 1/2 cups of mayonnaise 

- 1 cup of sour cream

- 1 cup of pesto - I use the Costco brand

- 1/2 cups of grated parmesan cheese

- 1 cup of grated mozzarella cheese

- 2 eggs

- ground pepper to taste

Here's how to make it: 

1. Preheat the oven to 400 degrees. Gather all your ingredients. 

2. Tear off all meat that you can get off of the rotisserie chicken that you can get. Set it aside. 

3. Add in the mayonnaise, sour cream and pesto.


4. Mix everything well.

5. Mix in both cheeses into the mix. 

6. Add some pepper and mix in. 


7. Add in the 2 eggs and mix well. 

8. Grab your 9 x 12 glass pan and line it with foil. Spray the inside of the pan with pan spray. 

9. Pour in mixture and make sure its even in the pan. 

10. Top with some more mozzarella and parmesan cheese. 

11. Pop it into the preheated oven for 20-25 minutes.

12. Once the timer is done, change it over to the broiler for about 3 minutes. Check in it every minute to make sure it's not boring. 


13. Take out and let sit for a few minutes.

14. Serve with your favorite Pasta and a veggie and you are ready for dinner! 


My family loves pesto so much that they choose to have pesto sauce on their pasta too! I made broccoli with the meal. 

How easy was that! Way too easy!
