Keto Pumpkin Cookies

You know what I miss the most while being in Keto? SUGAR! Like a brownie or cake or even gummy bears. I am always craving sugar and its so hard to get over the loss of sugar. Im always on a lookout for a great dessert that will give me that sugar feeling. So while scrolling through Pinterest, I came across a pumpkin cookie that sounded good. I love anything pumpkin! So when I find something with pumpkin and Keto, I've got to try it. 

I found the original recipe from Fit Mom Journey on Pinterest. I changed it up just a bit. I also didn't make the frosting but next time I would. I feel that they would have been better with the frosting. But It didn't stop me from eating a whole bunch of cookies! I even shared some at work, and they were pretty pleased with them! Keto for the WIN! 

Let me show you how I made these Pumpkin Cookies and what I thought about them. 

Ingredients 
  • 8 oz Cream Cheese, softened
  • 1/2 cup Pumpkin Puree
  • 1/2 cup Butter, softened
  • 1/2 cup Swerve Sweetener
  • 2 Eggs
  • 1 tsp. Vanilla Extract
  • 1/2 tsp. Pumpkin Pie Spice
  • 2/3 cup Coconut Flour
  • 2 tsp. Baking Powder
  • 1/2 tsp. Salt

  • Instructions

    1. Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper and set aside.

    2. Beat cream cheese, butter, pumpkin puree, and powdered sweetener. 


    3.Add in the eggs and vanilla and beat until fluffy.

    4. Add in the coconut flour, baking powder, pumpkin pie spice, and salt, stirring until just combined.
    5. Drop by cookie scoop onto the prepared baking sheets.
     
    6. Bake at 350 degrees for 15-20 minutes until the edges just barely start to brown. 

    7. Cool cookies on baking sheets for 5 minutes, then transfer to countertop to cool. 1 sheet of cookies came out a little too done, but the other was just perfect. I think next time I will bake 1 sheet at a time.

    My take on the August Club Couture - Rise Up

    A sweet Irish sentiment is the perfect way to start any journey. Having an Irish Heritage, this has a special place in my house and heart. My husband is Irish too, so there is a lot of Irish pride in our house. We even joke that our 1st born, Kellan, is so Irish since he was born with red hair and born in March. He is our Irish baby!   

    I really like the August Club Couture - I love that you can use the border separately too! This was a really easy and fast transfer to do. I didn't even need to use the Paste and Peel method. 

    I knew that I wanted to use 3 paste colors, but there are so many great choices, it took me a few minutes to find which ones that I wanted to use. When I joined Chalk Couture as a Designer, I got this great 9 x 12 framed chalkboard called the Couture Gallery Aiden Style White Frame that I have used for almost all of my Club Couture Transfers. They fit perfect and I love the frame on it. It gives it a farmhouse feel. 

       Let me show you how I styled mine. 

    Supplies needed: 

    Step 1: Get your accessories all together so you are not stopping mid way to grab something. This is the time to pick your paste colors and stir them well. Always stir your paste colors before you use them. If they feel a little dry, add a little bit of distilled water to it and stir well. I picked Bright WhiteColonial Blue and Guava

    Step 2: Take your transfer out of the plastic covering 
    and fuzz fuzz fuzz that transfer! 

    Step 3: Lay your transfer down onto your surface. 
    Make sure its completely flat. 

    Step 4: Make a game plan of where you want your paste colors to go. I wanted the border part to be in the Colonial Blue paste color, the the top and bottom words in the Bright White paste color and the middle words in Guava Paste color. Now you can start chalking! I used the Small Squeegees for each paste color. 

    Step 5: Lift up transfer and wash it off. The faster you wash it, the cleaner it will be. Use the Board Eraser to get it really clean, really easy. Its a great tool! After washing, lay it upside down so it can dry and you can put on the backing. These transfers are meant to be used 8-12 times each! But I have heard of people using them way more than that! Now clean your tools. During the chalking, I will wipe them will baby wipes, but when I am done, I just put them in a mason jar filled will water. These are easy to clean too. I've never even needed soap to clean them. 

    Step 6: Display your awesome chalk art!

    1st Day of School 2020!

    School has finally started again and it's a whole new game! We are at a new school since we moved, and our school district has decided on distance learning for the 1st quarter. This change was made last minute. We, including the kids, would rather have them in school. But we are dealing the cards we have been dealt, and making the best of it. 
    Kellan is in 5th grade. We were able to meet his teacher through the drive through supplies pick up. Mr. Baker seemed really nice and Kellan hopes to be in the classroom soon! 
    Arley is in 2nd grade. Arley said he teacher is awesome! She loved meeting her teacher during the drive through of supplies. Arley is eager to make new friends at her new school. 
    Mason is having some one on one time with Mom Mom doing preschool activities. Between Mason not wanting to potty training and the unknown of school, we decided to keep him out for this year. Mom Mom has been doing preschool activities so he won't be too far behind. I'm really bummed that he isn't at our normal preschool, but we home that things will be back to somewhat normal for next year. 

    The last quarter of school was really rough on the kids. The unknown of everything and the newness of online school made it tough for the kids. Plus they were constantly home without interaction with their friends. But we watched ALOT of movies and made the best of it! 

    Eventually the kids will go back to school and life will go back to normal, and this will just be a memory. We are so lucky that we have the support from my Mom (Mom Mom) who helps out in so many ways! The kids and I are so grateful for her!

    Step by Step - Measure Stir Bake

     What's baking in your oven today? Here's the perfect accent in your kitchen, complete with icing on the cake!

    Since staring Keto again, I am constantly in the kitchen trying out new recipes and making some old ones that I know that I love! I love finding new recipes to try. When cooking for my family, I have to remember to add in carbs since the are not on the Keto diet. 

    What is your families favorite meal? My family loves Meatloaf, mashed potatoes and salad with a side of garlic bread. 

    Cook with your kids, get that kitchen messy. That's what your kids will remember. All those yummy cookies that you made together. There will always be something to clean. Take the time to create the memories with them while they are young. 

    Want to make this? I'll show you how! 


    Supplies
    -A Small Cutting board - Try Hobby Lobby or Marshalls
    -Fuzzing Cloth (12" x 18")


    **Best part about these supplies is that one you buy them, you can use them over and over with other projects! 

    Step 1
    Get everything you need into your work area. Open up and stir your pastes so they are ready to go. 
    Step 2
    Fuzz your transfer. Make sure you fuzz it well, especially if it's a new transfer. 

    Step 3
    Lay your transfer down in the position you would like it on the surface of choice.


    Step 4
    Use the Black Velvet Paste and cover all the words. 

    Step 5
    Remove the transfer and either place in water bath or clean immediately. Once clean let dry. Once dry, please backer back on the sticky side of the transfer. 

    Viola! You are have new piece to put in your kitchen.  When you glance at your new DIY creation, make those cookies that make the kids so happy! Even though they love the cookies today, they will love the memories later.
