Easy Keto Taco Chicken Salad - Healthy - Low Carb - Easy 3 Steps!

 

I made a super easy and yummy lunch today! Some days I dread making meals for myself if they haven't been prepped already. I have to make lunch for 3 kids that have carbs, so marking and sharing lunch with them is usually out of the picture. 

During the work week, I normally have left overs to take, so its not a big deal. But on the weekends, Ive got to figure it out. Some days I just have cheese, salami and cucumbers with veggie-salt, but today I decided to get adventurous! 

I looked in the cabinets and found canned chicken from Costco. I know, it doesn't sound the best. But Costco makes great Tuna so I felt like it couldn't be that bad. I knew I has a few other Taco items, so I decided to mix it all together! 

Let me show you how I made the Taco Chicken Salad! 

Ingredients 
-canned chicken - I used the canned chicken from   Costco
-sliced olives 
-1 roma tomato
-shredded cheese
-cilantro dressing 
-taco seasoning
**I didn't measure anything, I just added as I went. 

Step 1
Open the canned chicken and drain it well. Even after you drain it out of one side, drain in from the other. There always seems to be liquid hiding in there somewhere. 

Step 2
Dump chicken into bowl. Cut up tomato and throw that into the bowl. Add some sliced olives and shredded cheese. Add a little drizzle of the Cilantro dressing. 

Step 3
Mix it all together. Add a sprinkle of taco seasoning and mix again. 

Lunch is served! How easy was that! And my youngest wanted a bite and loved it! 

The canned chicken is so easy and can be used it a lot of different ways. I can't wait to try out some more ideas with the canned chicken!

Keto Pumpkin Cookies

You know what I miss the most while being in Keto? SUGAR! Like a brownie or cake or even gummy bears. I am always craving sugar and its so hard to get over the loss of sugar. Im always on a lookout for a great dessert that will give me that sugar feeling. So while scrolling through Pinterest, I came across a pumpkin cookie that sounded good. I love anything pumpkin! So when I find something with pumpkin and Keto, I've got to try it. 

I found the original recipe from Fit Mom Journey on Pinterest. I changed it up just a bit. I also didn't make the frosting but next time I would. I feel that they would have been better with the frosting. But It didn't stop me from eating a whole bunch of cookies! I even shared some at work, and they were pretty pleased with them! Keto for the WIN! 

Let me show you how I made these Pumpkin Cookies and what I thought about them. 

Ingredients 
  • 8 oz Cream Cheese, softened
  • 1/2 cup Pumpkin Puree
  • 1/2 cup Butter, softened
  • 1/2 cup Swerve Sweetener
  • 2 Eggs
  • 1 tsp. Vanilla Extract
  • 1/2 tsp. Pumpkin Pie Spice
  • 2/3 cup Coconut Flour
  • 2 tsp. Baking Powder
  • 1/2 tsp. Salt

  • Instructions

    1. Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper and set aside.

    2. Beat cream cheese, butter, pumpkin puree, and powdered sweetener. 


    3.Add in the eggs and vanilla and beat until fluffy.

    4. Add in the coconut flour, baking powder, pumpkin pie spice, and salt, stirring until just combined.
    5. Drop by cookie scoop onto the prepared baking sheets.
     
    6. Bake at 350 degrees for 15-20 minutes until the edges just barely start to brown. 

    7. Cool cookies on baking sheets for 5 minutes, then transfer to countertop to cool. 1 sheet of cookies came out a little too done, but the other was just perfect. I think next time I will bake 1 sheet at a time.

    Step by Step - Measure Stir Bake

     What's baking in your oven today? Here's the perfect accent in your kitchen, complete with icing on the cake!

    Since staring Keto again, I am constantly in the kitchen trying out new recipes and making some old ones that I know that I love! I love finding new recipes to try. When cooking for my family, I have to remember to add in carbs since the are not on the Keto diet. 

    What is your families favorite meal? My family loves Meatloaf, mashed potatoes and salad with a side of garlic bread. 

    Cook with your kids, get that kitchen messy. That's what your kids will remember. All those yummy cookies that you made together. There will always be something to clean. Take the time to create the memories with them while they are young. 

    Want to make this? I'll show you how! 


    Supplies
    -A Small Cutting board - Try Hobby Lobby or Marshalls
    -Fuzzing Cloth (12" x 18")


    **Best part about these supplies is that one you buy them, you can use them over and over with other projects! 

    Step 1
    Get everything you need into your work area. Open up and stir your pastes so they are ready to go. 
    Step 2
    Fuzz your transfer. Make sure you fuzz it well, especially if it's a new transfer. 

    Step 3
    Lay your transfer down in the position you would like it on the surface of choice.


    Step 4
    Use the Black Velvet Paste and cover all the words. 

    Step 5
    Remove the transfer and either place in water bath or clean immediately. Once clean let dry. Once dry, please backer back on the sticky side of the transfer. 

    Viola! You are have new piece to put in your kitchen.  When you glance at your new DIY creation, make those cookies that make the kids so happy! Even though they love the cookies today, they will love the memories later.

    Keto Taco Cheesy Chips

     

    I have a few go to Keto snacks and this is one of them. And its so easy to make, I don't need to plan out to make them! Most of the time if I have the oven on, I will make a batch of these since they are soooo easy! And who doesn't love easy! 

    Ingredients & Items Needed:
    Cheese slices - I used Sharp Cheddar
    Taco Seasoning - I got my from the Dollar Tree
    Baking Sheet
    Parchment Paper
    Paper Towels 

    Yes... Thats it! I told you it was easy! 

    Step 1
    Preheat oven to 400. Line the baking sheet with the parchment paper. Let it hang over the edges a little. You will thank me later when clean up is a breeze! 

    Step 2
    Cut up a slices of cheese into and place on parchment paper close together but not touching. Sprinkle a little bit of taco seasoning over the cheese squares. You only need a tad- too much will over power your chip. 

    Step 3
    Put in the oven for 5 minutes. You will want them to turn a little brown on the edges. They will look bubbly- this is what you want. 

    Step 4
    When done and a little cooled, transfer to a place with paper towels. This will help absorb some of the grease and help them dry up so they will be more like a chip. 

    Step 5
    Once dried out, place in a plastic baggy and enjoy!

    Keto Pizza Bites- easy to make in just minutes!

    Since starting Keto again, I have tried to venture out into trying different things. Different meals, snacks and drinks... It's not always easy to find good Keto recipes. Pinterest is full of them, but you have try to them out to see if its a good fit for you. I once made these "yummy easy 2 ingredient pancakes" and they were gross! And then worst part of that is using ingredients that are expensive. I hate to waste them! 

    But I am going to share one of my go to snacks that I make almost every week! Pizza Bites! These are so easy and I can just bag them up and take them to work!

    Ingredients and Items needed:
    Mexican shredded cheese mix
    Pepperoni 
    Parchment Paper 
    Baking Sheet
    Paper towels

    Step 1
    Preheat your oven to 400 degrees. Grab your baking sheet and an piece of parchment paper big enough to cover the who baking sheet. Make sure it over laps a little of the sides. This will help making clean up easy! 

    Step 2
    Grab your Mexican shredded cheese mix and make flat 11/2 - 2 inch round portions. Make as many of those as you can without them touching. 
    Step 3
    Place a pepperoni on top of each cheese portion. 

    Step 4
    Put pan into the oven for about 5 minutes. You want them to just start to brown on the edges. 

    Step 5
    Once cooled just a bit, remove them from the parchment paper and lay them out on to a plate with paper towels. They will seem flexible right now. I like my more chrispy so I leave them out but covered for a few hours, sometimes overnight. Once some of the grease from the cheese has soaked up, they will be more like a chip! 

    Then I place into bags and have snacks available for work!

    My Favorite Keto Recipes from Pinterest! -


    I have bought books, I have bought magazine and I have bought Keto Menus from websites. But my favorite place to find Keto Recipes is Pinterest! I really never cooked much and when I first got married almost 8 years ago, I made the same stuff- Spaghetti, Soup and Guacamole. I know... He must have not married me for my cooking skills! Luckily, Pinterest was new and made life to easy! I started cooking and baking all kinds of things! 

    So fast forward to about 10 months ago. I kept hearing all about Keto this and Keto that... I have tried so many diets that works just a little or not at all. But hearing about Keto- I thought "how can you eat all that and lose weight?" Well my friends, it works! For me, It's slow. But Slow is better than not at all! 

    So I'm going to share some of my favorite Keto Recipes that I have found on Pinterest!

    1. BROCCOLI AND CHEESE STUFFED CHICKEN

    I have made this so many times and I LOVE IT! I have made it in the oven and on the BBQ. Both options are greats! The Bacon wrapped around it is the perfect finisher! So yummy! And each serving is only 2 g net carbs! 

    2. Chicken Enchilada casserole


    This is a hit with my whole family! Even the baby! WE all love Mexican style dishes so this fits perfect for us! I'm the only one on Keto, so I make Mexican rice and re fried beans for them. And there is always left overs, so I take that to work. This is really easy to make to. I have made it in the crock put and on the stove top. Either one is easy! 


    3. Taco seasoning cheese crisps

    These are great snacks and super easy to make! In my crazy life, I need easy! Best of all 0 CARBS! Shut the front door--- that make its even better! 

    4. Keto pina colada


    I have seen this Pin floating around Pinterest for a while a decided to try it... YUM! It's so great and refreshing! MY kids like it too! Its the perfect treat. I'm sure all the flavors are great. Once I try them, I'll let you know!

    Keto Wednesday - Peanut Butter Cookies



    Alright... So I have posted a few dinner type recipes. Now its time for a desert! I crave sugar all the time. I see candy in the store and I WANT IT! I see a yummy maple donut just staring at me in the case, and I WANT IT! So I searched and search and decided to try this out. 

    I found this recipe on Pinterest - Click Here to find where I got it from!



    Even better, its SUPER Easy! 3 ingredients! Thats it! 

    I know! Easy! 

    Here's what you need: 
    1 cup peanut butter
    1/2 keto friendly sweetener
    1-2 eggs



    That's it my friends!

    Preheat oven to 350 degrees. Mix them all together and then plop them onto the lined pan. I use Amazon Silicon Pan Liner and I don't have to spray it. It just works amazing! And no, I'm not getting paid for that- I just love it so much! Then, use a fork to smash them down into a cris-cross pattern. 








    Bake them for 12-15 minutes, depending on your oven. 



    Let cool once you take them out before eating.


    I did tried a variant of this by adding 2 eggs instead of 1 egg and I thing that I like 1 egg better. With using 1 egg, I could roll them into balls before putting them on the pan. With 2 eggs, I couldn't. I though it would make then fluffier, but it didn't. 

    These are dense cookies and you really only need 1 or 2 to be satisfied of your sugar craving.
