Keto Pizza Bites- easy to make in just minutes!

Since starting Keto again, I have tried to venture out into trying different things. Different meals, snacks and drinks... It's not always easy to find good Keto recipes. Pinterest is full of them, but you have try to them out to see if its a good fit for you. I once made these "yummy easy 2 ingredient pancakes" and they were gross! And then worst part of that is using ingredients that are expensive. I hate to waste them! 

But I am going to share one of my go to snacks that I make almost every week! Pizza Bites! These are so easy and I can just bag them up and take them to work!

Ingredients and Items needed:
Mexican shredded cheese mix
Pepperoni 
Parchment Paper 
Baking Sheet
Paper towels

Step 1
Preheat your oven to 400 degrees. Grab your baking sheet and an piece of parchment paper big enough to cover the who baking sheet. Make sure it over laps a little of the sides. This will help making clean up easy! 

Step 2
Grab your Mexican shredded cheese mix and make flat 11/2 - 2 inch round portions. Make as many of those as you can without them touching. 
Step 3
Place a pepperoni on top of each cheese portion. 

Step 4
Put pan into the oven for about 5 minutes. You want them to just start to brown on the edges. 

Step 5
Once cooled just a bit, remove them from the parchment paper and lay them out on to a plate with paper towels. They will seem flexible right now. I like my more chrispy so I leave them out but covered for a few hours, sometimes overnight. Once some of the grease from the cheese has soaked up, they will be more like a chip! 

Then I place into bags and have snacks available for work!
